Ride, Day Two (I know, way behind) Cheryl

Day two of the EMS Memorial Bike Ride took us from Princeton to Philadelphia. The ride started out easy, fairly flat, then into gentle rolling hills and a few hills that were close enough together and difficult enough to simulate a decent interval workout. We rode through Philadelphia with a police escort all the way to our hotel next to the stadium. We all cleaned up and went over to the Collingdale Fire Company #1 , who treated us to Ziti, chicken, roast beef and an array of fabulous desserts. If you were or are feeling sorry for yourself in any way at all, or were just looking for some good old fashioned inspiration, here it is: The reason the ride stops in Collingdale is because they lost a member of theirs in a line of duty death about 20 years ago. He was only 38. He had a wife and 10 children, the oldest child being 16 and the youngest about 16 months. After his death, his wife bought the deli down the street and made it a success (the people say that there was a shooting or stabbing about once a month in the area at the time she bought it – and there has not been ONE since). Oh, those desserts? One of his daughters made most of them. She made the 3-layer strawberry cake, the chocolate cheesecake, another chocolate cake and the cookies.
